🌤 Shade cultivation: the secret of Japanese umami

Weeks before the harvest, the tea fields are covered with netting that reduces sunlight by up to 90% . This process, known as shade-grown tea , is essential for obtaining high-quality matcha.

Thanks to shading:

  • It increases chlorophyll , intensifying the characteristic vibrant green color.
  • The production of amino acids such as L-theanine increases, which are responsible for the mild, slightly sweet taste and the marked umami flavor.

This technique differentiates ceremonial quality matcha from other green teas, both in flavor and nutritional properties.

🍃 From field to tencha: traditional processing of the leaf

After harvesting, which in the best crops is done selectively and carefully, the tea leaves undergo a brief steaming . This step stops oxidation and preserves the plant's natural freshness.

Next, the leaves are air-dried and the stems and veins are removed. What remains is the pure tea leaf specifically intended for making matcha: tencha .
